People who know me know my favourite dish in the whole word has to be the Dutch frikandel speciaal. This is a minced meat sausage with spices often served here with mayonnaise, curry (never ketchup) and chopped onions. For this special milestone of my 100th waffle recipe! Thanks so much for following along guys, I couldn’t have done it without you. I decided to make a waffled version combining it with frites. For this recipe, I decided to use sweet potatoes with my own version of homemade frikandel.
Frikandel Speciaal Waffle
150g spiralized sweet potato
2 tbsp. low-fat quark
1 tbsp. mayonnaise
1 tbsp. curry
1 tbsp. red onion
1 frikandel (minced meat sausage)
Mix together the spiralized sweet potato with the flour, egg, quark, mayonnaise and curry. When mixed add in the chopped frikandel and onion and mix again.
Heat up your waffle iron and bake a generous tablespoon of batter for one waffle. Serve the waffles with extra fried frikandel on top with extra mayonnaise, curry and onion.

Recipe for 15 frikandellen
3 stems of lemongrass
3 spring onions
2 red peppers
2 jalapeno peppers
1 tbsp. white pepper
1/2 tbsp. salt
1 tbsp. grated ginger
1 tbsp. laos
1 red onion chopped
2 tsp. shrimp paste
1 tsp. pink pepper
3 gloves of garlic
2 tbsp. ketjap sauce (sweet)
Mince the meat using a food processor of I’ve you got one a meat grinder. When grinded add both meats into a bowl.
For the spice mix chop the lemongrass, spring onions, peppers, garlic, and onion really fine. Put them in a food processor or a grinder and pulse or grind on high speed. Add in the rest of the spices and mix again till you get a nice wet herb mix. Add this to the meat and massage really well so everything is evenly divided.
Now comes the fun part. To roll them up in clingfilm. For this, it might be easier to look at this recipe video for the instructions on how to, but no worry I’ll explain down here in English.
Roll out a piece of clingfilm the size of one and a half A4 paper. Put some meat at the start and start rolling like you would do with sushi. Turn around the ends of the clingfilm really firm till nice and tight. Continue doing this for the rest of the meat until done.
When done preheat a big saucepan at around 80 degrees Celcius and cook the frikandellen for 30 minutes. When done let them cool down in some ice water. After that you can remove the clingfilm and make them dry.
Fry the cooked frikandellen in a frying pan at 180 degrees Celcius for about 5 minutes until they are nice and crispy on the outside.
