One of the things we couldn’t get around in Japan was the Sakura. We loved to see how everyone was mesmerised and waiting for the cherry blossoms to bloom in spring when we were in Japan. Of course next to all the festival items and people sitting under the cherry blossoms having lunch we also had some sakura inspired dishes. Sadly Starbucks already sold out of their Sakura special before we even arrived in Japan but luckily we found some nice places which served Matcha lattes with Sakura in it. For this waffle recipe I wanted to combine cherry blossom in it but sadly couldn’t find any in the Netherlands so decided to go with cherry jam and cherry blossom for decoration for this recipe. 16g vanilla sugar
1 tsp. baking soda
1 tbsp. cherry jam
Mix together the flour, vanilla sugar, salt, and baking soda in a bowl. Add the buttermilk with the cherry jam and mix until you get a firm dough. Bake the waffles in your waffle iron and use about one tablespoon for one waffle.
Serve the waffles with whipped cream, cherry jam, and pink chocolate with cherry blossoms on top.
