Recently I discovered Cheddar cheese, the fresh one and definitely not the single packed plastic slices. It tasted amazing and couldn’t help but use this in a waffle recipe. Since it’s been some time since I made mini waffles I decided to make this with spiralized zucchini, flour and egg whites. You get firm little cheese bites which are perfect for parties especially when you serve them with a nice dip. Chilli sauce immediately comes to mind. Happy Waffle Wednesday guys!
Spiralizer (or grater)
Put the zucchini through a spiralizer or ‘’shredder’’. Put in a sieve and press down to remove any excess moisture. Put in a bowl and mix with the flour and salt. Add the egg whites and Cheddar cheese and mix through till you get a nice batter. Heat up your waffle iron and bake a small tablespoon of batter for a small waffle or a big spoon for a regular sized waffle. Serve with dips like chili sauce and enjoy!
