We love guacamole. It’s easy to make and delicious as a dip with tortilla chips or use it as a spread on bread or even incorporate it into a Mexican dish. We were thinking about making this into a breakfast option. We love avocado, eggs and tomato for breakfast and decided to spice it up a bit with some Mexican influences. By shortly baking the egg with the avocado in the oven you get a delightful nutritious dish. Add the Mexican flavours and you’ve got a fresh breakfast as the perfect start of the day. We’re curious about what you guys think!
Guacamole breakfast – with avocado, egg & tomato
1 small onion (minced)
1 clove of garlic (minced)
1 red pepper (minced)
salt & pepper
Cut open the avocado lengthwise and discard the pit. Lay the avocado halves on a baking tray and preheat your oven to 200℃. Carefully place the first egg in a bowl and scoop out the egg yolk with some of the egg white and place it in the avocado. Add some extra egg white around it, but try to make sure it won’t fall off. Cut the tomato in slices and place next to the avocado on the baking tray. Next garnish the avocado with the onion, garlic, and red pepper. Squeeze some lime juice on top and finish of with a good bit of salt & pepper. Place in the oven and bake for about 15 minutes. Remove from the oven and garnish with the slices of tomato, coriander and a little bit of olive oil. Enjoy!
