Almost weekend! So the right time to put a little extra effort in your breakfast. After we’ve hit the gym we’re always at our ‘hangriest’ and really grave for a good meal. We had these amazingly delicious blueberries from the market and decided to make protein pancakes out of them. With lots of proteins in it thanks to the skyr and egg whites to work those muscles. And as an extra ingredient we’ve added some rum for taste. By just adding a little bit you get a whole new dimension to this recipe. Happy weekend everybody!

Blueberry protein pancakes
4 portions
Ingredients
200g flour
70g blueberries (+ extra to serve)
4g baking soda
110g skyr honey
1 tbsp. vegetable oil
1 tbsp. honey
80g egg whites
250ml almond milk
tiny bit of stroh rum
Instructions
Mix all the ingredients together except the dry ones (flour, berries and baking soda) till all is combined. In another bowl mix the flour with the baking soda and add this while mixing the batter until combined. With a spoon carefully mix through the berries so they don’t break. Heat up a pan on low-medium heat and add cooking spray (or a little bit of oil). Bake 3 or 4 at a time for about 3 minutes on each side. You can keep them warm in the oven at 50℃ while you continue baking the rest. Serve them with extra berries, honey and skyr and you’ve got a delicious breakfast. Happy weekend everyone!
