On hot summer nights we never feel like taking too long to make dinner. Luckily there are simple salades which you can plate up with minimal effort, and without the cost of flavor. Last weekend we were in Paris (the food was amazing, we will tell you more soon) and after a few hours in a train we decided to make a simple salad. The melon is really soft with a deep sweet taste and add that to the salty ham and you’ve got a great mix already. The best thing about cooking is that it doesn’t have to be complicated to make something really good. This salad we eat as a simple light dinner but could also serve perfectly for lunch.
5-minute summer salad with melon & Serrano ham
1 pack of mixed rocket salad
1/2 cantaloupe melon (chopped in small pieces)
60g Jámon Serrano
125g buffle mozzarella
1 tsp. sumac
1 tsp. pink pepper
1 tsp. mustard
2 tbsp. olive oil
1 anchovice (chopped in small pieces)
1 tsp. lemon juice
Place a layer of rocket salad on a plate. Add the melon on top. Tear pieces loose of the Serrano and mozzarella and divide over the plate. Garnish with the sumac and pink pepper. For the dressing add in all the ingredients except for the olive oil in a food processor (or blender). Pulse until combined and while pulsing add the olive oil in a small stream for it to combine. Add some of the dressing over the dressing, that’s all folks! Serve with some bread and enjoy!
