Almost every morning I start the day with oatmeal. And to spice things up I made a version out of the oven which tastes (almost) exactly like carrot cake. The best part is the preparations only take about 5 minutes and while you put it in the oven for half a hour you can continue with the rest of your morning rituals. The espresso combined with the sweet dates work in perfect harmony in this dish. I might have to think of another variety with this dish because I’ve been eating breakfast with this dish for weeks. 150 ml water
50g grated carrot
1 egg white (or one egg if you prefer)
3 asphikan dates (these dates are my favorite, soft & sweet)
1 eetlepel instant espresso
pinch of cinnamon
pinch of baking powder
Preheat the oven to 200℃. Whisk the egg white with the water together. Then add the grated carrot, oatmeal, baking powder, cinnamon and espresso through the mixture using a spatula (with the whisk too much would stay stuck in it). Cut 2 dates in small pieces and mix through the mixture. Grease the ramequin with some oil and pour the mixture in. Garnish the top with one date cut in 4 long slices and to make a cross. Put in the oven for 30 minutes and serve with some yogurt or quark. Enjoy!
