Cheese is one of my all time favourite ingredients to add to my waffle recipes. And one of those favourites has to be halloumi. I just love the rubbery like texture and salty taste when you eat it. I love serving them with grilled wild peaches and so decided to combine these two into a new waffle recipe. Happy Waffle Wednesday
Wild Peach Haloumi Waffles
2 wild peaches
1 tbsp. of buttermilk
Dice half of the halloumi and one of t the peaches. Slice the other half of the halloumi in thin slices. In a bowl mix together the flour, peach, diced halloumi, egg, buttermilk and salt. Mix till you get a firm dough and bake a generous tablespoon of batter for one waffle. While the waffles bake grease the remaining halloumi and slice the other peach and grease with some olive oil. Heat up your grill and grill the halloumi and peach until dark stripes appear on it. Serve the waffles warm with the halloumi and peach. Enjoy!
