Peanut butter is one of the most well-known spreads here in the Netherlands to put on bread. Personally, I prefer to mix it into recipes and never eat it as a spread. I love making Indonesian peanut sauce from it or combine it in sweet dishes like cookies. Or as Bakers Dough did for their peanut cookie dough variety, which is extremely delicious.
Sweet Peanut Sauce Waffles with Lime Curd
200g oatmeal flour
1 tbsp. olive oil
80g peanut butter
6 tbsp. coconut milk
Mix together the peanut butter, eggs, olive oil and coconut milk in a bowl. Sieve the flour with the salt on top and mix until you get a firm cookie dough like dough. Heat up your waffle iron and bake a generous tablespoon of batter for one waffle.
Serve the waffles with lime curd, frozen fruit and enjoy.

200ml fresh lime juice
lime zest (from all the limes)
6 egg yolks
75f fine sugar
110g dairy butter
125g white chocolate
some spinach juice (for the green colour or green food colouring)
Heat up the juice in a small saucepan with the zest. Beat the eggs with the egg yolks in a bowl with a mixer and sugar on high speed. Slowly pour the warm lime juice into the mixture while you keep beating. When combined put back in the pan and heat up for about 3-4 minutes on medium heat until it thickens.
Remove the pan from the heat and add in the dairy butter and chocolate. Mix until combined and let this cool down in a plastic container. When cooled save in the fridge for later use.
