I love using aquafaba in dishes since it’s a perfect replacer for egg whites but still packed with lots of proteins. Also, perfect if you’ve got a vegan diet. For this Waffle Wednesday, I’ve got a dish using chickpea mixed with one of my favourite spice which is ras el hanout. It’s gives so much depth and flavour to any dish. Combine this spicy dish with something fresh like avocado and lime and you’ve got a beautiful pallet of colours to serve for dinner or lunch. Enjoy guys!
Vegan Ras El Hanout Chickpea Waffles
1 can of chickpeas
80g chickpea flour
2 tbsp. ras el hanout
1 tbsp. parsley
1 tbsp. coriander
2 tbsp. pomme granate seeds
Open the can of chickpeas and save the juice from the can in a bowl. We’re going to make aquafaba from it which is the perfect replacer for egg whites in recipes and also packed with lots of proteins. Mash the chickpeas in another bowl and add in the ras el hanout, parsley, coriander. Using a mixer mix the chickpea juice for about 10 minutes until you get soft peaks like you normally would with egg whites. Scoop in 4 tablespoons of aquafaba to the mixer with the flour and combine until you get a firm dough. When the dough is too wet you can add some flour, or when it’s too dry add some extra aquafaba. You can bake something else with the leftover aquafaba or just throw it away if you don’t use it anymore.
Heat up your waffle iron and bake a generous tablespoon of batter for one waffle. While they bake mash the avocado with the lime juice in a bowl. Serve the waffles warm with the avocado, extra parsley, coriander, and of course with the pomme granate seeds. Enjoy!
