I just love using lentils in recipes. Especially the canned ones are so tasty combined with good flavours from any kind of stock and I just love the texture. One of my favourite recipes is boiling them in vegetable stock and serve them with spinach and pan-fried pancetta, quick and easy. For this waffle recipe, I decided to add in canned tomatoes and lots of sriracha for a well-flavoured waffle. I just love the taste of sriracha and it spices up any dish. Happy Waffle Wednesday guys.
Sriracha Red Lentils Waffles
2 cans of red lentils (rinsed & drained)
100g canned tomato cubes
1 tbsp. sriracha sauce
1/2 cube vegetable stock (grated)
100g cherry tomatoes
70g rocket salad
Put the red lentils in a bowl with the chopped tomatoes. Add the grated vegetable stock and sriracha and mix. Using a fork (or masher) mash the lentils before adding in the flour and mixing everything till you get a nice and firm dough.
Heat up your waffle iron and bake about two tablespoons of the batter for one waffle. When done serve the waffles with the cherry tomatoes, rocket salad, lemon and some extra sriracha. Enjoy!
