Although Surf ‘n’ Turf is regularly with red meat and seafood (classical steak & lobster) but for this dish, I combined one with tuna and chicken. Another awesome flavour combination you can use for many different recipes. And to add some extra spice I decided to use a lot of sriracha for a nice kick in it. Together you get a nice spicy tuna waffle topped with fried sriracha chicken. A delicious combination perfect for dinner or maybe even lunch.
Surf ‘n’ Turf Chicken & Tuna Waffles
130g canned tuna (preferably the ones in water)
1 tbsp. oil
1 tsp. baking soda
1 tsp. sriracha sauce
1/2 tsp. fish sauce
300g chicken thighs (chopped into smaller pieces)
2 tsp. white pepper
1 tsp. salt
100g rice flour
2 tbsp. buttermilk
frying pan with oil
2 tsp. sriracha sauce
1 tbsp. curry sauce
Start by making the batter for the chicken thighs. Mix together the pepper, salt, and rice flour. Add in the egg first and mix together with one tablespoon of the buttermilk. Mix until you get a nice batter. If it’s too thick you can add the other tablespoon of buttermilk. Mix the chicken thighs through it and let this set in the fridge for about 10 minutes.
Mix together all the ingredients for the tuna waffle and set this ready with your waffle iron. Heat up the oil and when the oil is around 180℃ add the chicken thighs and fry for about 5 minutes before taking them out. Let them dry on some kitchen paper before we’ll fry them again a second time. Heat up your waffle iron. Add in the chicken for a second time and also start baking the waffles using a generous tablespoon of batter for one waffle.
When the chicken is done add them in a bowl with the curry sauce and sriracha and mix through until coated. Serve the tuna waffles with the chicken on top and with extra sriracha and parsley for a nice dash of colour. Enjoy!
