Avocado has to be one of my favourite breakfast ingredients. Especially after I hit the gym I’m craving something fulfilling which is when I love the have avocado the most. Eating avocados warm I something you might have to get used to since it does lose some of its freshness when heated. But mixing it together with eggs, flour and adding some buttermilk you get a delicious waffle with an awesome green colour. Happy Waffle Wednesday guys!
Avocado Waffle with Poached Egg
2 tbsp. buttermilk
4 eggs (save 2 for the poached eggs)
1 tsp. baking soda
pinch of salt
Grab a bowl and crush the avocado with a fork until fine. Add the buttermilk, 2 eggs, salt and baking soda and mix until combined. Sieve the flour above the mixture while mixing until you get a firm dough. Heat up your waffle iron and bake a generous tablespoon of batter for one waffle. Continue baking until you’re out of dough.
For the poached egg, start by breaking the egg in a small cup. Heat up water until boiling point and make a swirl in the pan with a whisk. Add in the egg and cook this for about 4 minutes. Grab the cooked poached egg out of the pan and let it try on some kitchen towel. Do these steps again for the second egg.
Serve the waffles with the poached egg on top and try some of the serving suggestions done here to spice the recipe up. Happy Waffle Wednesday guys and enjoy!
Serve the waffles with extra avocado, tomato, red pepper for some spice, and maybe even crushed nacho chips instead of salt to make it extra special.
