Doughnuts are an old time favourite and when I’m not too lazy to buy them from the store I love to make them myself. Fried of course are the best to get nice fluffy ones, but put them in your waffle iron before frying and you get delicious waffle shaped doughnuts! Perfect to fill with your favourite filling and surprise someone with a different kind of dessert. Happy Waffle Wednesday!
Donut Waffles with Nutella & Lemon Curd
2 tablespoons of warm water
7g dried yeast
40g dairy butter
1/2 tsp. of salt
1 litre of sunflower oil
big pan for frying
Mix together the warm water with the yeast and let this rest for about 5 minutes to activate the yeast. Heat the milk to around 37℃ and add the yeast. Use a whisk and start whisking while you add the butter, egg and sugar to the mix. Continue whisking until the butter has melted. Put this in a big bowl with the flour and salt and knead the until you get a firm dough. Place back in the bowl and cover with a some wrapping foil and let this rest for an hour.
Roll the dough out and make small little balls of about 4cm from the dough. Place these on a big tray with enough room in between the balls so they can rise to about twice the size. Let this rest for another hour.
Heat up your waffle iron and the pan with oil. Test the heat of the pan with a little bit of the dough if it starts to fry you’re good to go. Place a ball in your waffle iron for only 10 seconds to get the shape and place in the big pan with the oil and fry on both sides for a few minutes until golden brown. Continue doing this until you’re of out balls of dough.
Fill the waffles when they’ve cooled down a bit with a filling of your choice. You can use jam, lemon curd or my all time favorite Nutella. Enjoy!
