It’s probably not hard to see I’m addicted to my waffle iron. Basically, it’s a grill which gives a nice pattern to anything you waffle in it. And it also helps pressing down your food so it cooks evenly and best of all much quicker than other methods. For this, I made a nice warm sandwich using my waffle iron to grill the bread and pork in. Easy and done in minutes. Perfect if you feel like having a quick satisfying lunch (or dinner even).
Waffled Asian Smoked Pork Sandwich
2 slices of pork fillet (1cm thick and about 70-80g each)
1 tbsp. Miso paste
2 tbsp. Soy sauce
2 tbsp. Chinese 5 spices
2 tsp. Smoked paprika powder
2 slices of thick Sourdough bread
2 tbsp. Thick mayonnaise
1 tsp. Wasabi paste
2 tsp. Soy sauce
2 tsp. rice vinegar
Some parsley, coriander and mint
Start with marinating the meat. Add together all the ingredients in a bowl and put the fillet in it. Rub in all the marinate on both sides and let this rest for about 10 minutes. Heat up your waffle iron. Coat the sourdough bread a little with some olive oil and grill in your waffle iron till the outside is nice and firm, but not too long or else you’ll get crostinis. Set aside and now grill the pork fillet for about 2 minutes till cooked through.
Mix all the ingredients for the sauce together and put a generous amount of it on your bread. Put the fillet on top and serve with herbs like parsley, coriander and mint. Enjoy!
