Zucchini is such a versatile vegetable you can use for many kinds of dishes. This rösti like version is one of them which we used zucchini we spiralized. This makes it easy to mix with eggs and flour, but of course, you can use grated zucchini also. We made a delicious sandwich perfect for lunch or maybe even dinner for you with waffled halloumi, tomato and a baba ganoush sauce. happy Waffle Wednesday!
Zucchini egg waffle sandwich with haloumi
1 zucchini (spiralized or grated)
1 onion (finely cut)
1 tsp. baking soda
salt & pepper
1 beef tomato in slices
350g halloumi in thick slices
some mint leaves
baba ganoush (or sauce of your choice)
Bake the zucchini slightly in a non-stick frying pan for a few minutes. Put in a sieve and soak out any excess moisture using a bowl on top of it. Add the zucchini with the eggs & onions in a bowl and combine. Add the flour, baking soda, salt & pepper and mix until you’ve got a nice batter. Heat up your waffle iron and bake waffles out of it using a generous tablespoon of batter for one waffle.
When done keep the waffles warm in a preheated oven at around 50℃ while you bake the slices of halloumi in your waffle iron. When done plate up your sandwiches and add the halloumi, tomato slices and sauce in them. Serve with some extra mint leaves and enjoy!
