Oatmeal with pumpkin, coconut and lime
150g pumpkin (chopped in small pieces)
400ml almond milk
80g oatmeal (large flakes)
2 tbsp. honey
2 tbsp. coconut flakes
2 tbsp. pumpkin seeds (roasted)
Mix the oatmeal with the almond milk in a small pan. Heat up on middle to high fire and bring to a simmer before turning the heat down to low. Cook for about 5 minutes until most of the almond milk has absorbed. Zest the lime and squeeze out the lime juice. Add the lime juice to the oatmeal and let it rest while we continue with the pumpkin. Grab a pan and heat up with some cooking spray or a little bit of oil. Add the chunks of pumpkin and bake for about 5 minutes before adding the honey. Bake for another 5 minutes until soft and caramalized. Add the oatmeal in a bowl and spread out the pumpkin on top. Finish off with the coconut flakes, lime zest and pumpkin seeds and enjoy.
