One of the most well-known pancakes you see are banana egg pancakes. Delicious, healthy and really easy make. But Desmond isn’t a big fan of bananas so we went experimenting with other ingredients. We tried avocado which is a good substitute for bananas with ice cream, but sadly not for warm dishes. We decided to give it a try with sweet potatoes and we love this recipe. Sweet potato pancakes
150g sweet potatoes
2 egg whites
60g low-fat quark
1 tsp. vanilla extract
1 tsp. baking soda
1 tsp. cinnamon
For the bacon
6 slices of bacon
6 pieces of paper towels
Peel the potatoes and chop them in small pieces. This will reduce the cooking time. Heat up a pan with bowling water and cook the potatoes for about 8 minutes. Rinse them off with cold water and mash them with a fork. Let it cool down a little in the fridge. Add the cinnamon, baking soda and vanilla to the mashed potatoes and mix together.
Add the egg whites and quark to the mixture and mix till you’ve got a nice batter. Grab a non-sticking pan and spray it in with cooking spray. Bake about 12 small pancakes from this recipe. Bake on medium heat until they have a nice golden brown color. Flip them over and bake until also golden brown.
For the bacon, this is super easy. Place 3 pieces of kitchen paper on a plate and lay the bacon on top. Add the other 3 pieces of top and microwave for about 3 minutes. Check halfway if they’re nice and crispy. They might take longer or shorter depending on your microwave.
Plate the pancakes and add some extra quark on top. Put the slices of bacon on top and finish of with some maple syrup or caramel sauce. Enjoy your Sunday!
