Sweet potatoes are something we use in one of our recipes on a weekly base. Versatile with many options to make many kinds of dishes. And one of those are rösti’s which we love! So we decided to make this into a new waffle recipe. This savoury waffle is perfect for lunch or maybe as a starter for a dinner. Especially with a topping with figs, spring onions and red pepper you’ve got a real treat. Happy waffle Wednesday and let us know what you think of this recipe!
Sweet potato rösti-waffles with figs
2 sweet potato (grated)
1 small diced onion
Pinch of salt
Pinch of pepper
1 tsp. red paprika powder
1 spring onion (in small rings)
1 red pepper (in small rings, and optionally without the seeds)
1/2 tbsp. honey
1 tbsp. oil
some sweet balsamic vinegar
Add the grated potatoes in a bowl and mix with the onion, eggs, pepper, salt and paprika powder. Heat up your waffle iron and grease it with baking spray. Add about two tablespoons of the mixture for one waffle and gentle press it in your waffle iron. This makes sure it won’t stick to the top side of your waffle iron.
While you make the waffles heat up a pan with the oil and fry the spring onion and red pepper. Add the honey and gentle stir through the mixture till the onion starts to glaze. Turn of the heat while you plate up the waffles.
Plate up the waffles and add the onion red pepper mixture on top. Place the figs over this and finish of with some baslamic vinegar. Serve them warm and enjoy!
