Michelle of Studentenvoer gave me the recipe of the delicious pancakes of Ontbijtbar in Rotterdam. Sadly they are gone, but luckily with this recipe we can remake their amazing pancakes. What makes them so special is the use of whipped egg whites and buttermilk which makes them very fluffy. Too make a small variant by adding healthy ice cream you can enjoy this guilt-free and have a satisfying breakfast. Did I mention the ice cream is blueberry-bacon?
Ultimate guilty pleasure breakfast pancakes (with ice and bacon)
2 egg yolks
2 egg whites
1/2 tsp. salt
1 tsp. sugar
1 tsp. baking soda
For the ice cream
6 tbsp. low-fat quark
4 tbsp. frozen blueberries
8 slices of bacon
1 tbsp. maple syrup
We start off with preparing the ice cream. Place the quark in a bowl and let it sit in the freezer for about an hour. Preheat your oven to 220℃ and coat with baking paper. Lay the slices of bacon on the plate and brush of with the maple syrup. Bake this for about 15 minutes until crispy. Let it rest out of the oven to caramelize. When could down you can break it in smaller pieces.
Get the quark out of the freezer and add with the blueberries in a food processor or a strong blender. Pulse until almost completely combined, it doesn’t matter if some blueberries aren’t mixed. Let this rest in the freezer when you continue with the pan cakes.
For the pancakes get 2 bowls. In one bowl add the egg whites and sugar and in another bowl the rest of the ingredients. Beat the egg whites with sugar using a whip until soft and foamy. Mix the ingredients of the other bowl together and gently add in the whipped egg whites too not loose to much air. Continue until combined. Heat up a pan on medium fire and add some oil. Bake the pancakes golden brown on both sides in a few minutes.
When the pancakes are done start plating them up. Get your ice out of the fridge and add on top. You can make a canelle or just add scraped ice cream whatever you prefer. Sprinkle the bacon crisps on top and finish of with extra maple syrup. Enjoy!
PS I had this for breakfast last and I have to say I truly love it. Especially combined with the healthy ice cream, made with only 2 ingredients (less healthy if you add the bacon, but it’s so good!).
